I know the holidays aren’t necessarily the time to think about Healthy Side Dishes,
but I do like to have a few options for those on special diets. We always celebrate Thanksgiving in the desert with my mom, and she loves to put on a big spread with lots of choices. We always have a gluten free option for the stuffing, and a low carb version of mashed potatoes, in addition to regular potatoes. And of course, there will be plenty of vegetables!
