Last week, I was craving a burger. Not a turkey burger, but a real burger, made with BEEF!
I’m not perfect, I crave. I eat healthy food most of the time, so I won’t feel guilty when I want something that’s not super healthy. That particular day, I wanted that burger with a lot of “junk” on it.
I started to think of all the things I really love: pesto, cheese, grilled veg and so the Mediterranean Burger was created.
I tried it with ground turkey, but it didn’t have quite the same ring. So the next day I picked up some good sirloin, 85% lean 15% fat. I don’t like it too lean or it just ends up being flavorless.
I grilled up some red bell peppers and portobello mushrooms. The burger was layered with Provolone, then a slice of grilled red bell pepper, a layer of Pesto, followed by the grilled Portobello mushroom cap and a fresh basil leaf. Yum! If you want to save time, get jarred pesto and roasted red bell peppers from any large grocery store.
