Double Apple Cake With Cider Glaze

Fresh double apple cake with cranberries and walnuts and an apple cider glaze.

Ingredients

  • 3 cups all-purpose unbleached flour or gluten-free flour blend
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • pinch cloves
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup oil (I use coconut oil)
  • 3/4 cup applesauce
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups diced apples about 2 (I used Braeburn, but you could also use Granny Smith)
  • 1 cup dried cranberries
  • 1 cup chopped walnuts
  • Glaze
  • 1 cup powdered sugar
  • 2 Tablespoons apple cider or apple juice more if necessary
  • 1/2 teaspoon cinnamon

Instructions

  • Heat oven to 350 degrees F. Grease and flour a 10" Bundt pan or tube pan.
  • Mix dry ingredients in a bowl.
  • In a mixing bowl on low, beat eggs, oil and applesauce and vanilla until blended.
  • Slowly add dry ingredients, mixing just until blended.
  • Fold in apples, cranberries and walnuts. Pour into prepared pan.
  • Bake at 350 degrees for one hour and 15 minutes or until a toothpick inserted in the middle comes out clean and cake is golden brown.
  • Cool before removing from pan.
  • To make Cider Glaze, mix powdered sugar, cinnamon and cider together. Drizzle over warm cake
