Blue Cheese Dressing

- 1 cup cottage cheese
- 8 oz. buttermilk
- 1 shallot minced
- 6 oz. blue cheese crumbled
- 3 Tablespoons chives finely minced
- Salt and white pepper
In a food processor, blend cottage cheese, buttermilk and shallots until smooth.
Add blue cheese crumbles and pulse. Leave it a bit chunky.
Stir in chives and refrigerate until ready to serve. Dressing tastes better if chilled for a few hours before serving.
