Blue Cheese Dressing

Ingredients

  • 1 cup cottage cheese
  • 8 oz. buttermilk
  • 1 shallot minced
  • 6 oz. blue cheese crumbled
  • 3 Tablespoons chives finely minced
  • Salt and white pepper

Instructions

  • In a food processor, blend cottage cheese, buttermilk and shallots until smooth.
  • Add blue cheese crumbles and pulse. Leave it a bit chunky.
  • Stir in chives and refrigerate until ready to serve. Dressing tastes better if chilled for a few hours before serving.
