Bacon-Wrapped Scallops

- 1 pound large scallops (about 12)
- 12 slices bacon
Rinse the scallops in cold water. Remove the "foot" from the scallops. Pat dry.
Cut the bacon to fit around the scallops. The size of the scallops will determine how long you cut the bacon strips.
Use a really long skewer instead of a short cocktail pick and then push the scallop all the way to the end of the skewer, securing the bacon in the skewer.
Place on a baking sheet under the broiler for about 8 minutes until the bacon is cooked and crispy, turning skewers halfway. Transfer scallops to a paper towel lined plate to dab off excess grease before serving.
- Scallops are graded by number per pound. Use larger scallops, which are about 10 to pound.
- Soaking the skewers will prevent burning.
- Use long skewers for a more elegant presentation.
