Cranberry Walnut Chicken Salad

This chicken salad has crispy apples, crunchy walnuts, cranberries and fresh rosemary. It serves 4 as a luncheon course or 6 as a sandwich filling.

Ingredients

  • 3 cups Chicken cooked and diced or shredded
  • ½ cup mayonnaise
  • cup dried cranberries
  • 1 Granny Smith apple diced
  • 2 teaspoons fresh rosemary finely chopped
  • 1 tsp. Coleman's dried mustard powder
  • ¾ cup walnuts chopped
  • Salt and pepper to taste.

Instructions

  • Mix all ingredients together. Season to taste.
  • Chill. Serve as a sandwich filing or on a bed of lettuce.
