Slow-Roasted Tomatoes, Goat Cheese and Mint Salad

Slow-Roasted "Moonblush" tomatoes with goat cheese and mint

Ingredients

  • 8 cups arugula spinach or baby lettuce
  • 1 cup soft goat cheese
  • 1 batch of Moonblush tomatoes
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon lemon juice
  • 2 Tablespoons freshly chopped mint

Instructions

  • Arrange the greens on a large dish or platter, then add spoonfuls of the soft goat chees here and there.
  • Add the Moonblush tomatoes.
  • In the same cooking sheet you used to make the tomatoes, whisk together the oil, lemon juice and pour over the salad.
  • Scatter with mint.
