White Chocolate Chip, Macadamia & Toasted Coconut Cookies

  • 1 1/2 cups butter softened
  • 1 cup granulated sugar
  • 1 1/4 cup packed brown sugar
  • 1 tablespoon vanilla
  • 2 eggs
  • 4 cups flour
  • 2 teaspoons baking soda
  • 1/2 salt
  • 1 12 oz package white chocolate chips
  • 2/3 cup toasted coconut flakes
  • 1 cup chopped toasted macadamia nuts


  • Heat oven to 350 degrees F.
  • In a mixing bowl, beat butter, sugars, vanilla and eggs on medium speed until light and fluffy. Stir in flour, baking soda and salt. Stir in chips, nuts and coconut.
  • On an ungreased cookie sheet, silpat or parchment, drop dough by tablespoonfuls. Flatten slightly. I made my cookies more like 2 tablespoons. I wanted big, fat cookies.
  • Bake 11 to 15 minutes depending on how big you make them, or until light brown. Cool a few minutes and then transfer to a rack to finish cooling.
  • Makes 3 to 5 dozen depending on how big you make them.
