Ground Beef Curry

Ingredients

  • 2 medium potatoes diced, about 2 cups
  • 1 medium onion sliced
  • 1 lb. lean ground beef or ground turkey or lamb
  • 2 Tablespoons coconut oil
  • 2 1/2 Tablespoons medium curry powder or mild curry powder
  • 2 cloves garlic minced
  • 1 Tablespoon ground ginger
  • 1 teaspoon ground cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt or to taste
  • 2 cup frozen petite peas
  • 1/2 cup chicken broth

Instructions

  • Chop potatoes into 1/2" cubes and thinly slice onions
  • Over medium heat add coconut oil or ghee and stir fry onions for 2-3 minutes. Add potatoes and continue cooking another 5 minutes.
  • Next add the spices; ginger, chile, curry powder, garlic, garam masala, and ground beef. Continue stirring, breaking up ground beef mixture and cook another 7-8 minutes over medium low heat or until meat is brown and cooked through.
  • Add bay leaf, 1/2 cup broth and peas and cook another 3-5 minutes until meat is almost dry and potatoes are tender. Check seasoning adding more salt and pepper if necessary. Not spicy enough? Add a pinch of cayenne.
  • Serve with rice, naan bread or roti and yogurt.
