Lime Bars
Tangy and creamy lime bars are dusted with powdered sugar for a delicious and easy dessert bar perfect for picnics or afternoon tea.

Shortbread Crust
Preheat oven to 325 degrees F. Prepare an 8″ by 8″ square pan by lining it with parchment paper or greasing it well.
Cream the butter and powdered sugar together until light and fluffy in a stand mixer or with a hand mixer. Add the flour and salt and mix just until combined.
Press or pat dough into bottom of the prepared pan.
Bake at 350* for 20 minutes or until barely golden.
While crust is baking, prepare the filling
Filling
In the same mixing bowl you made the crust, (no need to clean it!) mix sugar, flour, baking powder, eggs and 1/2 cup lime juice.
Pour onto partially baked crust and return to oven for an additional 20-25 minutes, or until a toothpick inserted in the middle comes out clean, and center has a slight jiggle.
The bars will continue to set after removing from oven. Cool completely. Cut into squares and dust with powdered sugar just before serving.
