It’s mid-summer, and my garden tomatoes are producing full-stop! We have them in salads, grilled, and tossed over pasta. But at some point, we just can’t eat them fast enough. I’ve been giving some to our non-tomato growing neighbors too. I’ve rounded up some terrific tomato recipes, including how some great ways to preserve them to enjoy them year-round! What to do with fresh tomatoes:

We try to enjoy our garden tomatoes within a few days of picking. To avoid them getting eaten by vermin, I try to pick them as soon as they are ripe, or a day or two before, and let them continue ripening on the counter.

  2. All fantastic recipes! I only grow cherry tomatoes, and they’re so easy to dehydrate. I’ve never dried large ones, but they’re beautiful, especially on the soup. Check out my risotto-stuffed tomato recipe!
