Curried Cauliflower

Curried cauliflower with shallots and garlic is an easy and healthy side dish option. Don’t wait for an Indian meal to make it though, it pairs beautifully with roast chicken or steak. It’s also low carb and keto friendly.

Cauliflower has made a resurgence in everything from pizza crusts to “mashed potatoes”. We like it roasted, mashed with butter, or quickly stir fried with curry, shallots, garlic, and cumin seeds. A recent trip to Italy featured a dish with multicolored cauliflower and I had to come back and make this dish using colorful cauliflower. It looks so beautiful with the warm gold curry powder

Ingredients for curried cauliflower

I like to buy the pre-washed and bagged cauliflower which is already trimmed, but buying a whole head of cauliflower is cheaper. I love the colorful cauliflower which you can find in most grocery stores. You can also just used white or purple cauliflower. I use a medium curry powder. Choose a hot or mild depending on your taste buds.

  • cauliflower
  • cumin seeds
  • curry powder
  • shallots
  • garlic
  • coconut oil, ghee or mild olive oil
  • kosher salt
  • black pepper

How to make curried cauliflower

I like to keep my Indian spices organized in this Spice Tin called a Masala Dabba. We prefer spicy food, but not spicy hot.

  • Trim any larger pieces of cauliflower for even cooking.
  • Thinly slice shallots. Mince garlic.
  • Heat oil in a large skillet over medium high heat. Add cumin seeds and curry powder, stir briefly.

  • Add shallots, garlic and cauliflower. Stir fry for 5 minutes or until cauliflower has turned golden brown in places.

  • Season with salt and pepper. Add 1/4 cup water, cover and let veggies steam for 2-3 minutes or until crisp tender.

  • Adjust seasoning if necessary.

What to serve with curried cauliflower

While you don’t necessarily have to serve this dish as an accompaniment to an Indian meal, I do have a couple of options that are Indian.

Curried Cauliflower

Ingredients
  

  • 1 pound cauliflower washed and trimmed into bite sized pieces
  • 2 shallots sliced thinly
  • 2 cloves garlic minced
  • 3 Tablespoons coconut oil avocado oil or ghee
  • 1/2 teaspoon cumin seeds
  • 1 Tablespoons curry powder mild or medium

Instructions
 

  • Heat oil in a large skillet or wok over medium high heat. Add cumin seeds, and briefly toast 30 seconds. Add shallots, curry powder, garlic and cauliflower.
  • Stir fry 5 minutes or until cauliflower is lightly golden brown in places. Season with kosher salt and black pepper.
  • Add 1/4 cup water and cover. Allow cauliflower to steam about 2 minutes or until water is evaporated and cauliflower is fork tender. Check seasoning, adding salt or pepper if needed.
