Soft ginger cookies are chock full of two kinds of ginger. If you’re a ginger lover, these are for you! These moist and chewy ginger cookies with plenty of spice are the perfect cookie to add to a holiday cookie tray.

Ingredients for ginger cookies
- 3/4 cup unsalted butter room temperature
- 1/4 cup sugar
- 1/2 cup dark brown sugar
- 1/4 cup blackstrap molasses
- 1 egg
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 teaspoon ground cloves
- 3/4 teaspoon ground ginger
- 1/2 cup crystallized ginger chips
How to make this ginger cookie recipe
- Preheat oven to 375 degrees F.
- In the bowl of a stand mixer fitted with a paddle attachment, cream butter until light and fluffy. Add sugars, molasses and egg and beat until well mixed.
- In a medium bowl, mix combine flour, baking soda, salt, cinnamon, cloves and ground ginger..
- Slowly add flour mixture to butter, mixing just until combined.
- Stir in ginger chips.
- Roll into 1-inch balls the size of walnuts.
- Place on prepared baking sheet lined with parchment paper or silpat about 2 inches apart.
- Bake for 8 to 10 minutes.
- Remove from oven and allow to cool on cookie sheet for 5 minutes before transferring them to wire rack to cool.
- Makes approximately 4 dozen. Store baked cookies in an airtight container.
