Zucchini salad is a delicious and easy summer dish that’s perfect for an over-abundance of garden produce during the summer montis! It’s light and fresh tasting with fresh lemon juice, fresh mint and feta cheese.
No fancy equipment is needed to make the zucchini ribbons, just a vegetable peeler can produce thin ribbons. It makes a perfect side dish on hot summer days. Ingredients for raw zucchini salad
- 2 fresh zucchini and yellow summer squash
- 4 ounces of feta crumbled
- 5-6 fresh mint leaves thinly sliced
- Juice of 1/2 lemon
- 1 or 2 Tablespoons olive oil
- Kosher salt and fresh pepper to taste
How to make zucchini salad
- trim the ends of the zucchini and yellow squash.
- Using a vegetable peeler make long ribbons, rotating the squash. I like this simple peeler.
- Toss with crumbled feta cheese, fresh chopped mint, lemon juice and 1-2 Tablespoons olive oil.
- Season with additional lemon juice, fresh pepper and kosher salt to taste.
Options for this cold zucchini salad
- Not a fan of feta cheese? Substitute goat cheese or parmesan cheese.
- Substitute the mint for fresh basil.
- Add kalamata olives or thin slices of red onion.

Ingredients
- 2 medium zucchini green and/or yellow squash
- 4 ounces feta crumbled
- 2 Tablespoons fresh mint leaves thinly sliced
- 1/2 1/2 lemon juiced
- Kosher salt and fresh pepper to taste.
- 1 Tablespoon extra virgin olive oil
Instructions
- Wash and trim squash. Using a vegetable peeler, make long ribbons on the zucchini and squash.
- Toss with crumbled feta, mint, lemon juice and olive oil.
- Season to taste with salt and fresh pepper.
