Aioli is a French sauce similar to mayonnaise popular in the south of France. It’s a traditionally used to accompany many Mediterranean dishes. It pairs well with fish, chicken, and even pomme frites or French fries! This version gets a flavorful boost from fresh tarragon.

How to make this tarragon aioli recipe

The traditional method for making aioli is to whisk by hand, but you can also use a blender, food processor or an Immersion Blender.

  • In a large bowl whisk lemon juice, egg yolk and garlic.

  • In a slow and steady stream, add olive oil, whisking constantly until aioli is desired consistency similar to a thinnish mayo.
  • Whisk in chopped tarragon and season to taste.
